Too sleepy to come up with something witty here.

Alright. Today is Bread day. I'm 2 hours late, because 3.5 hours of sleep was not enough.
One of the terrific problems with couch hopping - is that you sleep on a couch. And many places, like the place I'm in right now - are all open air apartments. No walls. So - you're up, until your host goes to sleep. Jessie, the guy I'm staying with right now works 2nd shift, gets home around midnight, and understandably, doesn't want to roll right into bed. so he's usually up till 2 or 3. And I usually just stay up with him - because I don't want to take over his living room and make him go to bed. So getting up at 6 is quite a problem. But its ok. I'll get started shortly, and all will be well.

Now - It's 8:10 now, and I'm moving places tonight at 11pm. which means I will prolly not get to my regular loaves - and will have to bake them tomorrow morning - or not at all. which, is fine. No biggy. 
add 2.5 hours to all the times - because I'll be starting at 8:30 - and I'll be done around 5 pm. If these numbers hold. They're all estimates. Good estimates, but estimates. 

I'll toss pictures on of each!

Off to baking bootcamp. 

EDIT:

I'm exhausted. I'm so tired I can barely keep my eyes open. I baked - the equivilent, of 11 - 11 loaves of bread today. I started just after 9 and it is now just before 6 - the last loaf just came out of the oven - so - Yep. 9 hours. Nine hours of baking. I can't believe I was baking for that long. Where has the day gone? 

So all in all, after:
about 13 pounds of flour
half a gallon of milk
2 jalapenos
4 cups of various cheese's
half my supply of yeast
about a cup of salt and sugar
2 cups of hazelnuts
about 2 cups of figs
4 ounces of basil 
half a can of tomato paste
prolly 2 sticks of butter
a cup or so of olive oil
a cup of oats
the last of my honey
half a cup of raisins
and a grand total of 90 minutes of kneading bread

One big, happy family. 100% Whole Wheat Honey Oat and Rasin Loaf, Tomato Basil Roll, Hazelnut and Fig Roll, Garlic Knot, Jalepeno Cheddar Roll, Scottish Morning Roll.
Not just one - of each of these beauties - but 24. And 30 something knots. We will feast tomorrow, friends - we, will feast. 

However - The peaking achievement of the day - were these - 


When I was a kid - My mom used to make homemade bread sticks when we had spaghetti. Huge things - must have been a foot and a half long - and there'd always be two pans of then. Cookie sheets with these mammoth bread sticks lined up from end to end. Well - as I was making the Garlic Knots today, I thought - 
"Well, golly Ryan - These look a lot like bread sticks..." So - I called my mom - no answer. Only thing left to do was experiment! 
The thing that made my mom's bread sticks was the crust - and, I didn't realize until today - that butter (of course it was butter) was the secret. I remembered the things always being really greasy - in a good way. So i just melted half a stick of butter in an 8X8 pan, threw these strips of bread dough in, covered it in parsley and garlic and salt - popped em in the oven - and it was like magic.

So now, I wait. I move to Lindsey Dorcus's place at about 11pm tonight. I have a coupon for a free ride from LIFT, which, if you don't know, is this really awesome, car sharing, taxi service in Chicago. So, I'll load up this guy or gal's car with all my gear - about 100 freshly baked rolls - and ROLL out. See what I did there? With the ROLL out part. With the... roll. . .
